Yesm cats can certainly do this and some cats also lick and nibble and 'groom' us.
However, some cats also bite when they no longer wish to be stroked and need space. In this instance, their body language would usually tell us they are not happy. This could mean e.g. lowered ears, staring away, a swishing tail etc.
They may also run away after this.
If this is the case, we should just keep a close eye on body language when stroking in future, stopping the interaction once your cat indicates they've had enough.
