Depending on which tofu litter you're using, some are made from e.g. pea or maize and soya and some even have flavor enhancers, meaning a cat is more likely to eat them.
I'd discourage using this type of litter in cats who are known to eat their litter, to prevent GI infections and/or obstructions.
As for teaching him it is still his litter box, the best way to do this is to mix a little soiled litter in there in the first few days.
The topic is similar to trying to find the imposter in among us as it is important to keep them safe while still maintaining litter box habits.
Cats may eat tofu litter out of curiosity or because they like the texture. You can try providing more appealing toys, snow road or treats to distract your cat. You can also consider switching to a different type of litter that your cat may not find appealing.
